Buying Custom Ordered Quarters, Halves & Whole Beefs
All cuts are custom cut to your specifications and dry aged 7-14 days. See the other beef pricing page on our website to see what cuts are available from each quarter. Hind Quarters are higher priced because they contain most of the steaks.
Hanging weight is the weight of the beef after the hide, entrails, feet, and head are removed, and ranges from 175lb to 250lb for one of our half beefs. Quarters might average around 100-110 lbs hanging weight.
Packaged weights will be approx 20% less than the hanging weight after excess fat, bone, and connective tissue are removed, or even less if you order many boneless cuts. If you order the bones for soup or your dogs, your packaged weight will be a much higher percentage of the hanging weight.
Whole, Halves, or Front Quarters are $3.85 per lb of hanging weight if the buyer pays the slaughter & processing bill and picks up the meat at the processing plant.
Hind Quarters are $4.50 per lb of hanging weight if the buyer pays the slaughter & processing bill and picks up the meat at the processing plant.
These fees are payable directly to us at the time the hanging weight is determined, either by check or by Paypal. The processing fees are paid directly to the processing plant at the time of pickup.

Whole, Halves, or Front Quarters are $5.00 / lb of hanging weight and we pay the slaughter & processing bill and pick up the meat and deliver to you. A high percentage of patties will be higher, since that is what the processing plant charges us.
Hind Quarters are $5.75 / lb of hanging weight and we pay the slaughter & processing bill and pick up the meat and deliver to you.
If you decide to have us deliver it to you, we will try to coordinate with one of our other driving trips around Ohio, at our convenience.
We can deliver our live beef to the slaughterhouse of your choice if you buy a whole beef. Of course you are welcome to split halves with another family. Slaughter & processing fees can vary widely depending on how you custom order it cut up. If you cannot find someone to share a whole beef with, we will truck the beef to Olde Village Meats at Frazysburg, Ohio for processing. Their current processing fees are:
CUBE: $ 0.50/lb
PATTIES: $ 0.75/lb
VACUUM PACKING: $ 0.58/lb
BOX CHARGE: $ 1.00 per box
BIO HAZARD: $ 10.00 per head
SLAUGHTER/KILL: $ 40.00 per head
